Are the ESRI imagery from geoviews.tile_sources import EsriImagery pulled from the web or static files? Do you know to which date the tileset corresponds to? (or date range if the images are aggregated from different overpasses?)
I find FAQ: Is It Possible to Determine the Date of an Image from the World Imagery Basemap? which suggests each tile has metadata about the date it was collected. Could this be displayed on hover on a geoviews bokeh plot?
